Observation: Wash water for the dishwasher is only 30 C. The hand sink water temperature varies (20-40 C).
Corrective Action(s): Water for hand washing must be 38C and the wash water for the dishwasher must be 50C- 60 C or as per machine specifications.
Ensure hot water supply is sufficient for peak hours.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Fridge /freezer food storage room floor and floor/wall areas require cleaning. Floor is difficult to clean.
Concrete floor in the main food prep service area is also rough and difficult to clean (concrete is worn).
Wooden base for the coffee roasting equipment is rough wood.
Corrective Action(s): Seal the main food prep floor, food storage room floor and all wooden surfaces (base of coffee roasting equipment) so they are impervious to moisture and easy-to-clean. Do this by April 1st, 2018. Follow a written routine cleaning schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Water is leaking from the bottom of the Frigidaire domestic cooler used to store produce and some cheese.
There is also water on one of the shelves. Air temperature is ok (<4 C).
Corrective Action(s): Clean up any water leaks and make sure fridge is working properly and is no longer leaking to protect food from contamination. Note: Alfalfa sprouts in this fridge - label advises to wash before use (must be washed).

Routine check:
Premises changes: Double sink at back room was removed previously. Recommend that you re-install at least a single hand washing sink as you are doing some food preparation (bean roasting only) in this room. ***Provide floor plans that show changes and also include in the plans the change of use of the paddle board room as a food storage room.
Supervisor has Food Safe Level 1 certificate. Keep copies of Food Safe certificates on-site.
Coolers are at 4 C or colder - good.
Hand washing station in main food preparation/service area has liquid soap and paper towels.
Rice hot holding - 60 C - good.
Tuna - in cooler at 4 C.
Scoops/utensils are run through dishwasher every 2 hours.
Chlorine bleach - spray bottle is labelled.
Dishwasher final sanitizing rinse is 50ppm - good. See above about water temperature.
