Observation: Mouse droppings observed on the floor (underneath staircase) of the ground floor kitchen area. Unable to determine whether droppings are from past or current activity. Operator currently maintains a monthly service contract with a professional pest control company. Next visit is due in within the next few days.
Corrective Action(s): *Clean and disinfect area where droppings were found* (Use bleach/water solution and wear disposable gloves and mask while cleaning)*
*After cleaning, continue to monitor the area for signs of new mouse activity*
*Ensure to follow any additional recommendations from the pest control technician*

Observation: Minor food debris/spills noted on floor under/behind equipment on the ground floor kitchen.

*Maintain a regular cleaning schedule to clean up all soil & debris from the floors on a regular (ie. weekly) basis*
*Ensure hard-to-reach areas (ie. under/behind fixed equipment, shelves, countertops) are included in the cleaning schedule*

- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius with exception of the 2 Efi refrigerators upstairs (6 degrees C, 8 degrees C)
*Operator advises that the cooler doors were accessed frequently in the morning prior to the inspection. Temperature logs from earlier in the AM list temps as 3C and 5C).
*Monitor cooler temps closely to ensure the temperatures are restored to safe levels (ie. 4 C or lower) within 1 hour. If cooler temps remain elevated, contact a repair company to investigate and repair the units*
- Freezer temperatures are satisfactory
- Quaternary-ammonium food-contact surface sanitizer solution available at 200-400ppm concentration (Ecolab/Kay sanitizer)
- High-temp dishwasher reached final rinse temperature of ≥71o Celsius (77.6C)
