Observation: The caulking around the 3-compartment sink is moldy and has lifted along the side of the wall.
Corrective Action(s): Remove the caulking and re-caulk the area.

Observation: There's no thermometer available for measuring hotholding temperatures. Manager on duty is forging the temperatures in the logbook.
Corrective Action(s): Purchase a thermometer for measuring hotholding temperatures and use that daily to measure actual temperatures before recording them in the logbook.

On Follow-up:

All items from the previous inspection report are still pending. PHF's are not being stored in the right side of the line cooler. Operator has ordered a replacement fan which will be installed over the weekend.
