Observation (CORRECTED DURING INSPECTION): Hot held food temperatures are above 60 C with the exception of the rice in hot holding unit (temperature 40 C).
Corrective Action(s): Rice is to be reheated to 74 C and then held hot in a pre-heated hot holding unit (above 60 C). Rice reheated during the inspection. If hot foods are held at a temperature below 60 C for more than 2 hours, throw away the food. Provide food containers that are safe for use in the microwave for when you need to microwave food.
