Observation (CORRECTED DURING INSPECTION): 0 - 10 ppm chlorine residual detected at the dish surface after the dishwasher's rinse cycle.
Corrective Action(s): Sanitizer supply was changed at time of inspection (to a new jug). 100 ppm chlorine residual detected at the dish surface after the rinse cycle. Ensure to check concentration of dishwasher sanitizer at the beginning of each production day.

Comments

- Facility was not in production at time of inspection.
- Hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer solution available at 200 ppm
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to dish surface, detected after the rinse cycle (after switching sanitizer supply to a new bottle - see violation code 302).
- Walk-in cooler measured at 4C. Walk-in freezer measured at -19C. Accurate thermometers available.
- Food storage practices were satisfactory. Good separation of raw and ready-to-eat food items.
- Proper thawing of frozen foods observed (in walk-in cooler).
- Dry storage areas satisfactory
- General sanitation satisfactory
- Pest control in place, no signs of pest activity noted at time of inspection.
