Observation (CORRECTED DURING INSPECTION): Chlorine sanitizing spray bottle measured with over 200 ppm chlorine solution. 100 ppm - 200 ppm chlorine solution is required for proper sanitition of food contact surfaces.
Corrective Action(s): Dilute the aforementioned sanitizing spray bottle to ensure 100 ppm - 200 ppm chlorine sanitizer is available for use

Observation: Mutiple uncovered cooked food items observed in the both walk-in coolers. This is a repeated violation.
Corrective Action(s): Cover all cooked food items in the walk-in coolers to reduce the risk of contamination. Correct by: Immediately.

Observation: Grease build-up on the filter of the exhaust canopy in the kitchen. The maintainence tag on the canopy stated the last maintainence was due on December 2018.
Corrective Action(s): Clean the exhaust canopy to ensure all grease build-up is removed from the filter. Correct by: April 11, 2019.

Observation: Chlorine sanitizing spray bottle did not have a label on it.
Corrective Action(s): Label the sanitizing spray bottle with the name of its content such as "sanitizer" or "bleach". Correct by: Immediately.

Observation: In operator's absence, no staff on site had FOODSAFE Level 1 or equivalent.
Corrective Action(s): Staff must obtain a valid FOODSAFE Level 1 certificate or ensure at least one person on site has a valid FOODSAFE Level 1 or equivalent. This is a repeated violation. Correct by: April 18, 2019.

Routine inspection:
- Both walk-in coolers at 4C or less.
- Both prep coolers at 4C or less.
- Walk-in freezer at -19C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Low temperature dishwasher dispensed 50 ppm chlorine solution at the plate level.
- Ice machine maintained in a sanitary condition.
- Hot holding was not in used at the time of inspection.
- No pest activities observed at the time of inspection.

Note: At the time of inspection, multiple equipment were removed from the premise. Ensure to notify the Environmental Health Officer first for approval before removing any equipment from the premise.
