Routine health inspection conducted.
- Coolers at 4 degrees C or less (includes walk-in, deli service, and deli store floor coolers)*
- Raw and ready-to-eat food items are properly organized. Food is stored off the floor.
- Hot holding internal food temperatures at 60 degrees C or more (includes food in deli service area and store floor hot holding case and soup station).
- Temperature logs maintained.
- Hot and cold running water, liquid soap, and paper towels are in place at all hand washing stations.
- Non-latex gloves available
- High temperature dishwasher measured 72 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at the utensil surface).
- Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottles and at three-compartment sink at 200 ppm.
- It was stated that in-use equipment (e.g. slicers) are cleaned and sanitized at least every four hours.
- No visible signs of pest activity observed at time of inspection, and a pest control management program is in place.
The following was discussed: Additional cleaning is needed from deli slicing area to dishwashing area (non-food contact surfaces)--management stated areas are to be deeply cleaned tomorrow.
*One cooler ("Cold HMR") at 7 degrees C at time of inspection. Ambient temperature had dropped to 5.6 degrees C during inspection, and temperature logs indicate cooler was at less than 4 degrees C today. Cooler may potentially be in defrost cycle and/or temperature may be elevated due to frequent opening/closing of sliding doors. Continue to monitor temperature, and adjust or service as necessary if cooler is unable to maintain a temperature 4 degrees C or less.
