Observation (CORRECTED DURING INSPECTION): Resident cooler air and food temperature is at 6 C. Temperature records show <4 C when checked earlier today.
Corrective Action(s): Cooler thermostat was adjusted during inspection. Check temperature again in 30 minutes to make sure that it goes down to 4 C/ 40 F or colder. Keep all potentially hazardous foods at 4 C or colder.

Food Safe certificates - keep copies on site. Certificates are to be no more than 5 years old as they expire after 5 years. Staff on site today advise that they have recent Food Safe certification.
Coolers (staff, produce) are at 4 C or colder. Resident cooler adjusted - see above. Temperature records are up to date.
Produce is washed on-site before use.
No hot holding of foods noted during inspection.
Hand washing sink has hot/cold water, liquid soap and paper towels.
Dishwasher has a sani-cycle and NSF certification. Sanitizing cycle is used for each load.
Chlorine sanitizer is used for wiping cloths and to sanitize counters and food contact surfaces. Today, 200ppm chlorine was detected in the solution - good.
Premises is well - organized.
