Observation (CORRECTED DURING INSPECTION): Large sweets and dry food display cooler was turned off and ambient temperature of cooler was above 4C. Operator explained that they switch out any PHF (Dairy containing) sweets within 2 hours, with ones that are in the walk-in cooler to avoid sweets being hard/stiff.
Corrective Action(s): Ensure there is a method/system to verify when the sweets must be switched out in order to avoid sweets sitting out at the danger zone for longer than safely allowed.
