Proper usage of single use gloves noted. - Sushi cooler measured at or below 4 C. Under counter line cooler measured at or below 4C. 2- door upright fridge measured at or below 4C. Chest fridge measured at 4C or colder. Chest freezers measured at -18 C or colder. Upright freezer measured at -20C. Beverage display was at 4C. - Food is to be covered inside fridges. Ensure raw food is stored below cooked and ready to eat food. - Hot holding units measured at or above 60C. Miso soup measured at 80C. - Dishwasher registered at or above 71 C in final rinse water. 2- comp sink noted clean and maintained. Implements are to be air dried after sanitizing. General sanitation is satisfactory. -- No obvious sign of pest activity at this date. Pest management implemented. -- Floor noted clean.
