Observation: Food debris/items (eg. bagel) found under the walk-in freezer (within the walk-in refrigerator). As well, food debris/items (eg. donut) found under the back preparation table. Ensure that food debris/items are cleaned up/removed so that the premises is maintained in a sanitary condition.

Observation: The under counter refrigeration unit (closest to the donut preparation area) is not closing properly. Ensure that the rubber around the door is fixed so that the door closes properly and that the temperature will remain consistent within the unit.

Comments

All refrigeration unit temperatures are less than 4C.
All freezer unit temperatures are less than -18C.
Hot holding units (eg. soup, chicken, etc) are greater than 60C.
Sanitizer solution (QUATS) available in bucket for wiping cloths and at a concentration of 200 ppm. As well, the main dispenser is at 200 ppm.
Dishwasher (high temperature) temperature is 77.9C at the plate surface, which meets the requirements of 71C at the plate surface.
Handsinks available and fully stocked with paper towels, soap, and warm water.
Washrooms are maintained in a clean and sanitary condition.
Ice machine is clean and free of mildew.
Food stored in containers and with covers. Food stored off the ground.
Chemicals stored away from food.
Food Safe trained staff on-site.
No signs of pests/rodents at the time of inspection. Confirmed with pest control that no pest/rodent activity.
Overall sanitation of premises is acceptable.
