Observation: - Mutiple flies of different varieties (fruit flies, drain flies) noted in back area of the store primarily near produce prep area.
Corrective Action(s): - Notify Pest Control Technician of fly issue and have Technician provide services to address issue. Follow any recommendations given by Pest Control Technician.
Note: Fly light present above sink in produce prep area; however, does not appear to be controlling the issue at this time and additional measures are needed.
- Maintain a high level of sanitation and ensure any food debris/scraps, such as from fruit/vegetable trimming, are cleaned up and disposed of in receptacles outside so that flies are not attracted to this area.
Currently, a box is being used to collect fruit/vegetable trimmings in produce prep area which may be contributing to the issue. Obtain a suitable organic waste bin with tight fitting lid.

Comments

- General sanitation of store retail area satisfactory.
- Cold holding units in retail area operating at 4C or colder
- Walk-in cooler (produce) 4C
- Walk-in cooler (dairy) 3C
- Freezers in retail area maintaining food products in a frozen state
- Walk-in freezer (grocery) -18C
- Liquid soap and paper towel present at produce prep area for handwashing.
- Quats sanitizer solution present at produce prep area. Concentration measured 200ppm.
- Ensure proper manual warewashing procedures (wash, rinse, sanitize, air dry) are used for cutting board and knives used for produce prep.
- No evidence of rodent activity noted in retail area or back area of store. Pest Control contract in place with monthly service. See violation above regarding flies.
- Alcohol based hand sanitizer and signs advising customers to sanitize hands were present in self serve areas (coffee beans, water bottle fill station)
