Observation (CORRECTED DURING INSPECTION): Several vacuum-packaged fish were thawing in the walk-in cooler. The vacuum packaging was opened to allow oxygen in and to measure the internal temperature. The internal temperature was measured to be < or = 1C.
Corrective Action(s): In the future, open up the packaging of all frozen vacuum-packaged foods before defrosting in the cooler. Date to be completed by: Immediately

-General sanitation is satisfactory
-All hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
-All coolers (walk-in, under-counter, prep) at < or = 4C
-All freezers (walk-in, chest) at < or = -18C
-Hot holding units not in use at the time of inspection
-Low temperature dishwasher in use. Chlorine concentration reached 50 ppm at the plate level during final rinse.
-Glasswasher dispensed 12.5 ppm iodine sanitizer
-200 ppm Quat sanitizer available in spray bottles throughout facility
-Ice machine is clean
-Dry storage is satisfactory
-Washrooms provided to customers are clean and equipped with proper hand washing stations
-No signs of pests observed during inspection
