Follow up inspection:
Upright glass door cooler was at 1.6 degrees C (4 degrees C or less). Corrective ORDER was rescinded. Cold potentially hazardous food can now be stored in this cooler as it is at or below 4 degrees C / 40 degrees F.
The coils of each cooler were cleaned on-site.
The prep. cooler was below 4 degrees C. Condensation was not observed inside of it.
Keep up with regular temperature checks (e.g. every 2-4 hours) and document accurate temperature on a log on at least a daily basis. Management should audit the temperature log randomly throughout each month.
