308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The 2-compartment sink, in the storage room, has leaking drain pipes. A bucket has been placed under the pipes to catch the water. Leaking pipes are a water source for pests and will cause water damage to other areas of the premises.
Corrective Action(s):
Immediately repair/replace the damaged drain pipes so that they do not leak. Ensure the water in the bucket is discarded every night to eliminate a water source for pests.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
The following areas are damaged:
1) The walk-in-cooler floor is broken and unsealed, not cleanable, nor smooth.
2) The wooden shelves in the walk-in-cooler has exposed raw wood as the paint has worn off.
3) The ceiling above the exhaust hood is unsealed drywall. This will absorb grease, odors, and it isn't cleanable.
Corrective Action(s):
The premises is old and structural improvements are needed.
1) Repair or replace the floor in the walk-in-cooler so that it is smooth, sealed, cleanable, level, and made of a durable material.
2) Seal/paint the wooden shelves in the walk-in-cooler so they are sealed and cleanable. Or, replace with a material that is smooth, sealed, cleanable, level, and durable.
3) Seal/paint the unsealed drywall above the exhaust hood. This will allow the ceiling to be cleaned and stop the absorption of grease, condensation and odors.

Observation:
The premises has broken equipment (fridges, blenders, mixers, etc.) and excess items (food containers, tins, dishes, etc.) being stored in various areas. The accumulation of unused items makes it difficult to clean the premises thoroughly as there is too much stuff in the way, and staff are not moving the items. As well, unmoved items provide an environment where pests love to live in.
Corrective Action(s):
Remove, discard and/or sell all items that are broken, in excess, and you haven't unused in 6 months. This will de-clutter the premises and provide more storage space for items in use.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -20C or colder; thermometers present; and no temperatures recorded.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle. Test strips available, ensure staff are testing the [Cl2] every day before use to ensure it is at the right level.
- Glasswasher had [I2] of 12.5ppm during the rinse cycle. Test strips available.
- Sanitizer solution in spray bottles had [Cl2] between 100-200ppm.
- Food storage practices done correctly. Foods stored in food grade containers; covered; labeled; 6" off the floor; and in groups so protein are separate or below RTE foods.
- No expired foods in use. FIFO rule being followed.
- Unable to observe food handling practices and premises not in operation during inspection.
- General sanitation is satisfactory.
- No signs of pests.
- FoodSafe certified staff present.
