- Coolers: ≤4C
- Freezers: -8C to <-18C (Food products are maintained in a frozen state).
- Hot Holding: >60C
- Reheating procedures for packaged chili and soups reviewed with manager. Food is reheated to 74C before it is placed in hot holding unit for service. Probe thermometer available to verify temperatures.
- Food storage practices appears satisfactory. Food is protected from contamination.
- Beverage stir sticks are stored in ice water between uses.
- Interior of ice machine appears maintained in a sanitary condition.
- Wiping cloths stored in 200 ppm QUATS.
- High Temperature Sanitizing Dishwasher: 73C at dish surface. Rinse Temperature Gauge Reading: 86C
- General sanitation appears satisfactory.
- No signs of pest activity noted at time of inspection. Monthly pest control reports for May, April, March reviewed - no pest activity noted.
