Observation (CORRECTED DURING INSPECTION): Refer to Code #308; main walk-in cooler not able to maintain 4 C or lower. Foods stored inside were measured to be at 5-6 C when probed with thermometer. All cold potentially hazardous foods must be stored at 4 C or lower at all times
Corrective Action(s): Required opertor to transfer all non-potentially hazardous foods such as whole fruits and vegetables to a working cooler. All other potentially hazardous foods must be discarded. Operator transferred and discarded foods accordingly at the time of inspection

Observation: Observed exposed wood, sticker covers, duct tape and old caulkings throughout the facility. All surfaces must be durable, easy to clean and impervious to water.
Corrective Action(s): Required operator to remove all stickers/tapes and repair old caulking and exposed wood to fulfill the above three requirements of suitable design/material.

Observation: The only walk-in cooler in the facility was measured at 9-10 C with IR thermometer. When measured with probe thermometer, internal temperature of foods were approximately 5-6 C. History of temperature logs were not found, unsure for how long the items in the walk-in cooler was above 4 C.
Corrective Action(s): Required operator to transfer all non-potentially hazardous foods such as whole fruits and vegetables into working prep coolers. All potentially hazardous foods must be discarded. Required operator to call technician to repair the walk-in cooler to good working order. All coolers must be able to hold foods at 4 C or lower at all times

Other than noted, all other prep coolers are in good working order; they were measured at 4 C or lower
Freezers at -18 C or lower; ensure to defrost and allow air circulation to evenly cool/freeze all products.
No sign of pests noted at the time inspection
