Observation (CORRECTED DURING INSPECTION): Two large cardboard boxes labelled as "beef round boneless excellent genuinely better beef" previously used to ship raw beef products used to store cooked deep fried chicken.

Corrective Action(s): DO NOT use cardboard to store food items that are cooked. Cardboard can NOT be adequately cleaned and sanitized.
This practice has the potential to contaminate cooked food items. If previously cooked food items become contaminated and are then not reheated to adequate surface temperatures there is the potential to cause a foodborne illness to customers.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1) Upon arrival of EHO facility did not have any sanitizer solution available for use. When questioned where the sanitizer solution was the owner answered that the sanitizer solution was all used up yesterday and none was available today. The time was 12:30pm. Owner asked EHO to obtain bleach from home and return shortly. Owner left facility and returned with mostly empty bottle of bleach. CORRECTED DURING INSPECTION - Sanitizer solution made at 200ppm Chlorine.

This is the THIRD inspection in a row where upon arrival of EHO the facility lacked sanitizer solution.

Corrective Action(s): 1) Ensure adequate supply of sanitizer solution at all times at facility. Sanitizer solution is to be made at the start of the day and used throughout the day. The facility has ongoing rodent infestation and therefore sanitizer solution needs to be used prior to the start of food production on food contact surfaces.
2) Ensure knife racks are used to store CLEAN knives only
3) Clean and sanitize areas affected by rodent droppings. Use 200ppm Chlorine solution or equivalent
4) Ensure only clean rags are used for cleaning

Observation (CORRECTED DURING INSPECTION): Owner observed to sweep rodent droppings then return to food handling (grab noodles with bare hands) without washing hands after using broom or prior to handling food directly. CORRECTED DURING INSPECTION - Owner was instructed to wash hands. Noodles discarded.

Repeat offense - this violation has occurred prior to this inspection and the rationale was provided as to why this practice is unsafe and is not to occur. Plastic may not be food grade and may leach chemicals into food items intended for customer consumption
4) Owner's personal keys found stored on food preparation surface upon arrival of EHO.

2) Freezer units downstairs need defrost as large accumulation of ice has built up around edges
3) Freezer unit downstairs repaired with tape. Tape is not an acceptable repair product as it can not be cleaned properly
4) Part of the blue hand sink handle has broken. Repair immediately before it becomes completely broken and unusable
5) Tape on shelves needs resurface in walk-in cooler. Tape is not an acceptable repair product as it can not be cleaned properly.
