Observation:
1) The floor is missing tiles where the new bread proofer will be installed. This area is not sealed or cleanable, this will attract pests.
2) A big carboard box, containing a new bread proofer is sitting in the middle of the Bakery Dept.. The cardboard box can not be cleaned and staff are processing food all around the box. This is unsanitary for the food, and it could attract pests as the cardboard box is not clenable.
3) Portion of wall, hanging from the ceiling above the new ovens, was cut out. The drywall is exposed and is not sealed or cleanable, this will attract pests.
Corrective Action(s):
1) Increase attention when cleaning this area to ensure food debris is being removed from the rough, unsealed floor, to prevent pest issues.

2) Immediately move the box to one corner of the bakery so food isn't being processed around the box.

3) Refinish the wall portion that was cut out, the drywall is sealed/painted and cleanable, and to prevent pieces of drywall from falling into food.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezer below -18C; thermometer present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water. Ensure all hand sinks are accessible at all times, there shall NOT be any items or trolleys blocking access to the sink.
- Quats sanitizer was 200ppm, and test strips present.
- Sanitation level is good. More attention needed in the noted areas to prevent a pest problem.
- No signs of pests.
- High temperature dishwasher present, but not turned on at time of the inspection. Dishwasher only used from 5am-11am when production of baked items being done. The remainder of the day is spent packaging, cutting or decorating.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on racks, platforms or shelves.
- No expired foods in use or for sale. FIFO rules being followed.
