Comments

-Time tracking was not being done during the lunch rush for the pizza at the front. A board was already prepared for time tracking and it was updated during the inspection. Ensure that time tracking is being done at all times. All coolers were < 4 C. All freezers were < -18 C. The dishwasher reached 73 C at the plate level. Check daily. The glasswasher had 12.5 ppm Iodine. General sanitation was satisfactory.
