Observation (CORRECTED DURING INSPECTION): Right prep cooler in front area was at 8-10 deg C.
Corrective Action(s): Operator indicated that it may have been coming down from defrost cycle. Cooler fan indicated it was cooling down. Temperature was slowly decreasing by end of inspection. Operator to send picture of cooler temperature at <40deg C to confirm cooler is still functioning properly. As discussed, any food items kept above 40 deg F/4deg C for four hours or more would need to be discarded.

-Handwash stations (2 in back kitchen) equipped with liquid soap, paper towels, hot/cold running water
- Other prep coolers (with exception to above mentioned one) were at 4 deg C or less
-All freezers at -18 deg C or less
-Hot holding at 60 deg C or greater
-High temprature dishwasher achieved 75.7 deg C after rinse cycle (minimum 71 deg C required)
General sanitation excellent
Quat sanitizer in rag bucket at 200 ppm QUATS
No signs of pests at time of inspection
