Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher measured at 0ppm chlorine. QUAT sanitizer spray bottles measured at 100ppm. Built-up syrup observed to be undernealth the soft drink machine and on the nozzles.
Corrective Action(s): Service the low-temperature dishwasher to measure at leat 50ppm chlorine. Remake QUAT sanitizer spray bottles to measure at 200ppm. Clean and sanitize the soft drink machine to remove built-up syrup. Cleaning and sanitizing of the soft drink machine to be corrected by: March 18, 2022.

Corrective Action(s): Ensure all food are covered and scoops not stored in the dry good bins and ice machine to protect against contamination. Remove chopped lemons and mint from the ice bin and store in a cooling unit able to hold an air ambient temperature of 4C or lower. Corrected by: Immedately

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUAT dispenser measured at 200ppm. Chlorine test strips available.
Walk-in cooler measured at 4C. Walk-in freezer measured at -20C.
Sandwich sauce prep cooler measured at 4C.
One prep cooler observed to be not in service.

NOTE: Ensure all food are stored at least 6 inches off the floor, food is all covered, all cooling units are able to hold an air ambient temperature of 4C or lower, and sanitizer spray bottles are near all food preparation areas. Email district inspector on proposed updated floorplan regarding the installation of a new sandwich line for approval.
