Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Stainless steel colanders used for the containment of fruit while it is being 'washed' before cutting, are not being sanitized, and are being dried with paper towels after being washed.)

Comments

A wire shelf has been installed over the two compartment sink for the drying and storage of washed & sanitized utensils being used in the cut fruit program. The new 'Artisan Sausage' program was discussed, written procedures were reviewed, and the location of the activity in the meat cutting room was determined to be adequate. The procedures will be observed during the next inspection.
