Observation: No sanitizer detected on site.
Correction: Ensure all wiping cloth are being stored in a sanitizer, completely submerged at all times. Hand use required at this time until dispenser unit is properly functioning. Utilize test strips to check for proper sanitizer concentrations.

Reinspection based on previous routine inspection report.
- Manual Dishwashing procedures:
- Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Sanitizer dispensing unit repaired.
- Sanitation: facility is required to be kept clean and organized. Cleaning of "hard to reach" areas (ie: Below/under shelves, sinks, etc) is to be conducted on a routine basis. Store all items in designated areas, remove all unwanted/unused items. Ensure a "daily, weekly and monthly" cleaning schedule is being followed.
