* Antipasto manufactured on site is not approved for sale. Operator has removed from retail shelving. Operator to send me the recipe and canning procedures. Include as much detail as possible ie cooking temperatures, exact amounts of vinegar/concentration added etc. A ph test of the finished product will be required. All cold holding temperatures cold holding at <4c New walk in freezer installed in the outdoor storage building. Walk in freezer at <-18c Dishwasher at approx. 60ppm chlorine and 120F. Soap dispensed into wash cycle.
