Routine inspection
- Hand washing sink is equipped with hot/cold running water, liquid soap and paper towels. Staff in charge of department observed to hand wash properly and frequently.
- Walk-in cooler is at or below 4C. This coolers is very organized. Different racks utilized to separate cooked and raw food. Lighting is adequate.
- All other coolers are at 4C or colder. Cooked and raw separation is followed in fish display cooler. Very organized!
- All freezers are at or below -18C. First-In First-Out is practiced.
- All cooling units are provided with thermometer.
- Temperature monitoring log maintained for all units. Thermometer calibration were discussed. Ice slurry were used to calibrate thermometers.
General sanitation is satisfactory.
- Sanitizer QUAT 200 ppm available to sanitize food contact surfaces, cutting boards etc. Chlorine sanitizer is utilized for floors.
Food safety
- Proper food safety procedures were discussed with staff in charge regarding oysters and fish.
- Fish processing tools were stored in sanitary condition in walk-in cooler.
