Observation: Food in indercounter cooler in the cook line measured at 10C. The cooling unit is not working. Staff stated that the unit has been broken and they keep the food cold by adding ice to the inserts.
Corrective Action(s): Do not store any perishable food in this cooler until is repaired. Repair or replace the unit so that it can hold the food temperature at or below 4C.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hot water not available in one hand washing sink in the kitchen. Staff stated that the sink is not usually used. The sink also was blocked with kitchen equipment. Staff were directed to hand wash at the other available stations.
Corrective Action(s): Provide hot water at the sink.
Remove all the obstructions from the hand sink.

Observation: Mice droppings observed in the dry storage under the shelve and around the 2-comp sink. A mouse was observed in the dining area running under the tables.
Corrective Action(s): Thoroughly clean and sanitize areas affected by mice droppings. Use chlorine solution 1000ppm to sanitize floors. Ensure the food containers are pest proof. Ensure there are no food debris left on the ground during night time.
Seal all wholes and crevasses so that possible mice enterances are blocked.
Set effective traps to reduce and control mice problem.
Contact your pest control company and enquire an effective solution to control mice issue.

Observation: Walk-in freezer has been out of service since June 19, 2022. No food observed in the unit at the time of inspection. Frozen food is now stored in 2 upright freezer. It was stated that some frozen food was transported off-site due to spacing issue.
Corrective Action(s): 1- Repair or replace walk-in freezer as it is needed to answer the menu demand in the restaurant and in order to handle food safely. Or add more freezer units in order to store frozen food safely.

- Walk-in cooler is at or below 4C. Food storage observed to be acceptable. Thermometer available. Temperature monitoring log available and kept updated.
- Sanitizer QUAT 200 ppm provided in sani-buckets. Wiping cloths are to be stored in the solution.
- Ice machines observed to be clean and ice scoops stored outside. Ice scoop storage was discussed.
- Low-temp dishwasher final rinse measured with 200 ppm QUAT. Clean dishes are to be stored in sanitary condition.
- Mice traps observed.( See the violation notes). Fruit fly traps observed.
