Corrective Action(s): This screen door must be self-closing otherwise it will need to be locked everytime to better prevent the entry of pests

Observation: Preparation cooler showing 10-11 deg C internal temperature for beef. Air temperatures showing 10 deg C below the inserts as well

The beef was stored in a large bowl on top of the inserts above the Fill-Line

Daily log sheets for this unit show 3 deg C for this unit in the morning
Corrective Action(s): Adjust / repair the unit -foods need to be maintained at or below 4 deg C
