Observation (CORRECTED DURING INSPECTION): Several vegetable inserts stored in water. Staff advised these were kept on ice as one of the prep coolers was down. Internal product temperature of bok choy 17 C.
Corrective Action(s): All products discarded. For inserts on ice , you must continue replenish and check that product temperatures are maintained < or = 4 C.

Observation (CORRECTED DURING INSPECTION): Homemade teriyaki sauce internal temperature 57 C, product made > 2 hours prior.
Corrective Action(s): Product discarded. All potentially hazardous food must be stored > or = 60 C.

Observation (CORRECTED DURING INSPECTION): Sanitizer pail for rags beside sushi bar handsink had < 50 ppm chlorine.
Corrective Action(s): Solution remade to ~ 200 ppm chlorine. Staff must refresh sanitizer often and ensure it does not fall below 100 ppm.

Observation: Mice droppings observed throughout premises. Previous pest control reports indicate 1 capture in August, 2 captures in July.
Corrective Action(s): Increase your pest control service to bi-weekly. Any potentially entry points must be blocked off to prevent further pest entry.

Observation: Mice droppings observed throughout premises: behind push cart, beside white standup fridge in sushi bar area, in both dry storage areas, beside Advantedge display cooler.
Corrective Action(s): Thorough cleaning required throughout facility. Pull out all equipment and clean areas beneath and behind. Clean and sanitize all affected areas (1 day).
