205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Cold potentially hazardous food products (e.g. sliced tomatoes) were noted at 10C in the topping cabinet front display cooler. (top layer). The unit itself was able to maintain at 4C or below. This is likely due to the individual toppings being overloaded in the containers and no lids are available for these containers (due to constant use) that the warm air from the environment is transferred to the top layer of these containers. As per operator, the turnover time for these containers are quick.
Corrective Action(s): Please do not overload the topping cabinet in the front display cooler to allow products to be stored at 4C or below as the top layer of the ingredients are noted over 4C. Alternatively, place time stamp on containers and discard any unused ingredients after 4 hours if unable to keep temperature for the entire container of ingredient below 4C.

During the follow-up inspection, the temperature of these ingredients will be assessed. If temperature is noted over 4C and time is not used as a control, these products will all be discarded and progressive enforcement actions may ensue.

Observation: Missing paper towel by the handwash station in the staff restroom.
Corrective Action(s): All handwash stations must be equipped with hot and cold running water, liquid soap and paper towel at all time to allow operator and staff to perform proper handwashing practices.

Observation: Garbage bag used to wrap an open box of mushroom in the upright cooler in the front of house.
Corrective Action(s): Do not used garbage bag for the storage or protection of food as there are chemicals in garbage bag for controlling odor that may be transferred to the food they come into contact with and may become a chemical hazard.

Observation: Mop bucket was not emptied at the time of inspection.
Corrective Action(s): Empty the mop bucket immediately after use to avoid the attraction and breeding of flies from the dirty mop water. Note: This issue was noted on the last routine inspection as well.

1. Interior of the front of house upright cooler.
2. Interior and door ledge of the back of house upright cooler. White mold buildup noted on the interior door ledge.
3. Floor of the front of house and back of house area.
4. Wall by the grill top.
5. Dust noted on the light rails in the front of house.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition at all time. Please follow your sanitation plan cleaning frequency to maintain the cleanliness of these areas.

Observation: 1. A yellow cutting board was noted with dark black stain that does not appear to be removable.
2. Garbage bag noted used to line the bottom of the back of house upright refrigerator.
Corrective Action(s): **Issue #1 corrected at the time of inspection** 1. Cutting board was discarded.
2. Do not use garbage bag as a liner for anything that may come into contact with food.

Routine inspection conducted today:
Handwash stations (except for restroom) accessible, equipped with hot and cold running water, liquid soap and paper towel.
QUAT sanitizer available in spray bottle at the front of house. 200 ppm QUAT detected - excellent.
Hot hold units were noted > 60C.
All refrigeration units were noted at ≤ 4C.
Please reorganize the upright cooler in the front of house area to allow for proper air circulation within the cooler unit. Large boxes and containers are stored in this refrigerator, impeding proper air flow. Top of unit noted at 4C, however bottom shelf was noted at 11C (note: Unprocessed/ uncut produce was stored in the bottom shelf at the time of inspection).
All freezer units were noted at ≤ -18C.
Drain plugs available for the 3-compartment sink for manual warewashing.
Operator was onsite at the time of inspection - FOODSAFE level 1 certificate available and expires in July 29, 2023.
