302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 0 PPM QUAT detected from the sanitizer container and spray bottle at the start of the inspection. When the wall mounted dispenser is checked, the concentration was also close to 0 PPM.
Corrective Action(s): **Issue corrected at the time of inspection** Staff went downstairs to the separate catering business and got QUAT sanitizer from that facility. 200 PPM QUAT was detected from the newly dispensed sanitizer containers.
Fix the wall mounted dispensers so that 200 - 400 PPM QUAT is detected prior to use - test strips available onsite, please use these.
In the meantime, borrow from downstairs until dispenser is adjusted/ replaced.

Observation: 1. About 5 mouse droppings noted on the floor by the mini Coors Light cooler.
2. 10 flies noted in the bar area.
Corrective Action(s): 1. Pull out the cooler, sweep, clean and sanitize the floor be the Coors Light cooler. Monitor area after cleaning for signs of rodent activites.
2. Keep bar area clean. Avoid having stagnant water in bar area. Continue to work with your pest control company to help mitigate and eliminate fly issue.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The folllowing areas require sanitary attention:
- Grease on the wall above the upright cooler at the end of the cookline.
- Dust noted on the wall behind the ice machine.
- Debris noted on the floor below the cutting boards.
Corrective Action(s): Clean the abovementioned areas and maintain in a sanitary condition as per your Sanitation schedule.

Observation: Torn door gasket noted in the 3-door kitchen cooler.
Corrective Action(s): Replace broken door gasket. Door gasket must be in good repair to allow for proper cleaning and sanitation. Also, it helps with maintaining cooler temperature when the door gasket is in good repair.

Routine inspection conducted today:
Handwash stations, including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Hot hold unit was holding food above 60.0C.
Food in general is stored protected and in the proper storage hierarchy.
Low temperature main dish machine was detected with 50 PPM chlorine residual.
Low temperature bar dish machine was detected with 12.5 PPM iodine residual.
General cleanliness has greatly improved - especially along the cookline and dishwashing areas - keep up the great work.
Kitchen Manager's FOODSAFE level 1 certificate verified - expires 2027.

The following facility issue will be discussed during the next routine inspection. Operator must start thinking of a plan to repair the following issues:
1. Missing paper towel dispenser at the cookline handwash station - as per Kitchen Manager, they are awaiting for the correct dispenser from manufacturer as it has been ordered.
2. Missing/ broken floor tiles by the deep fryers.
3. Broken/ partially missing outlet plate on the wall by the magnetic knife holder.
4. Hole on the wall below the magnetic knife holder.
