Observation (CORRECTED DURING INSPECTION): Bakery goods stored in the hot cases were not kept at a temperature of 60C or higher. Internal of meat rolls was at 43C and egg tarts was at 48C. Food items have only been in the hot case for 1 hour. If temperature are not sold in the next hour, they are to be discarded.
Temperature check indicated that internal temperature of food products in the hot case were at 72C internally.
Temperature setting was increased at the time of inspection and ambient air temperature in the case increased to 65C. Ensure the hot holding case is place at the appropriate setting to ensure food items are kept 60C or higher.

Observation: Rodent droppings noted the following areas:
- underneath shelving units for containers of cake topping
- on containers of the cake toppings. Containers of contaminated foods were discarded.
- underneath back 2 compartment sink
- void space between the oven unit and the walls.

Corrective Action(s): Ensure all areas contaminated with rodent droppings are properly cleaned and sanitized.
Facility is on a weekly contact with a pest control company. Pest reports dated Feb 5, 13, and 19 were review. Pest report indicate that mice activity is noted in the monitoring stations placed in the bakery area. Ensure all hard to reach areas and all spillage onto containers or floors are thoroughly cleaned daily. Ensure all potential rodent entry points are identified and sealed. Management team is to take a more aggressive rodent treatment with pest control to eliminate the pest problem. As a reminder, rodent baits are not permitted in food processing or storage areas.
