Observation (CORRECTED DURING INSPECTION): Raw oysters in shells stored in front tank at 14.2C. These oysters are served raw for seasonal use.
Corrective Action(s): Do not store raw oysters here as tank cannot keep it at 4C or colder. All oysters removed. Advisory letters, tent cards and info to be mailed to operator. Do not offer raw oyster on menu until proper procedure in place.

Sushi cooler fans cleaned and is now operating at 4C.
Grilled chicken being cooked and cooled at time of inspection, double stacked noted. Reminded staff not to store more than 2 inches high for proper cooling.
Rubber mats placed on top of aluminum foil, this is not an acceptable way either. Remove aluminum foil, use trays to catch water as discussed.
Dishwasher records up to date and no double stacking noted.
