Observation (CORRECTED DURING INSPECTION):
1. Two open containers of brocolli in the walk-in cooler observed stacked one on top of the other. Staff moved the container during inspection.

2. Large cardboard box of cabbage observed stored directly on the floor in the walk-in cooler. Staff moved the box of cabbage to the shelf during inspection.
Corrective Action(s): Store all foods at least 6 inches off the floor and covered at all times to prevent potential physical, biological and chemical contamination. Do not stack open contianers/inserts of food on top of one another as this may lead to potential food contamination.

Routine Inspection Conducted

Observations:
- Walk-in cooler at 3'C
- Walk-in freezer at -19'C
- Preparation coolers at or below 4'C
- Hot-holding units measured above 60'C
- Temperature logs are maintained as per approved food safety plan - good!
- General sanitation of premise is good during inspection
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 82'C at plate surface (above minimum required final rinse temperature of 71'C)
- QUATs sanitizer in pails with wiping cloths measured at 200 ppm QUATs concentration with test strip
- *REMINDER: QUATs test strips are observed expired (2020). Ensure to obtain new test strips within expiry to adequately measure QUATs concentration throughout the day (as per approved sanitation plan)
- Staff and public washrooms observed in good sanitary condition
- No signs of pests during inspection
- First-in-first-out method is in use
- FOODSAFE Level 1 trained operator is available on site
- Health permit is posted in a conspicuous location on site
