Observation: Sanitizer pails (green) were not labelled at the time of inspection.
Corrective Action(s): Operator stated labels are on order. Containers can be labelled with a felt marker or another label for the time being. Ensure all containers are properly labelled to prevent accidental mixing or misuse of chemicals.

Comments

-Follow-up inspection to Sept 19, 2018.
-Hot potentially hazardous foods made yesterday were probed at 3C. Containers were cooled half full and without covers to assist rapid cooling.
-Hot holding of soups was greater than 60C (75C). Hot holding unit which was not able to maintain proper temperatures during the previous inspection is not in use - currently not functioning.
-Staff member on-site had valid FoodSafe Level (valid until Feb 2019). Additional staff are scheduled to take FoodSafe Level 1. Ensure staff successfully complete FoodSafe Level 1 or equivalent courses (not just food safety courses).
-Prep cooler door seals have been measured and are waiting to be replaced.
