A routine inspection was completed:
- Coolers 4C or colder; freezers -20C or colder; hot holding unit above 60C; and thermometers present.
- A new high temperature dishwasher has replaced the old one. The rinse cycle temperature was 76.9C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle had strength of 200ppm.
- All foods stored in food grade containers; covered; date coded; labelled; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Valid, FoodSafe certified staff present.
- A new ice machine has replaced the old one. Ensure to peel off the protective plastic on the machine so it exposes the cleanable stainless steel underneath.

ACTION: All wiping cloths shall be stored in a bucket of sanitizer when not in use. The sanitizer in the bucket must be changed every 3 hours to ensure the strength is strong enough to kill germs.
