Observation (CORRECTED DURING INSPECTION): Facility had run out of QUAT-based sanitizer and was using Oxy-San (7.25% hydrogen peroxide) for sanitizing food contact surfaces and dishware. Label on bottle of Oxy-San did not state it was safe for use on food contact surfaces with no rinse step.
Corrective Action(s): For sanitizing dishware/equipment/food contact surfaces, your sanitizer must be safe for use on food contact surfaces without an additional rinse step. Bleach was available onsite. Staff prepared 100 ppm bleach (chlorine) solution for sanitizing dishware/food contact surfaces at time of inspection.

Observation (CORRECTED DURING INSPECTION): Hand sink by kitchen entrance was obstructed with a dolly cart.
Corrective Action(s): All designated hand washing sinks must be easily accessible (unobstructed) in addition to being properly equipped.

Observation: Staff onsite did not have FoodSafe level 1 or equivalent.

Comments

- Routine inspection conducted.
- Hand sinks were supplied with hot/cold running water, liquid soap, and paper towels. Ensure they are always easily accessible/unobstructed (see violation code 401 above).
- Triple-sink available for manual warewashing. Sink drain stoppers available for use.
- QUAT-based sanitizer for food contact surfaces had run out. Use 100 ppm - 200 ppm bleach solution in the meantime as discussed. See violation code 302 above.
- Coolers measured 4C or less.
- Freezer measured -18C or less.
- Accurate thermometers available. Temperature records available and well-maintained.
- Food storage practices satisfactory.
- General sanitation satisfactory, aside from ventilation canopy (see violation code 306 above).
- More staff to register for and complete FoodSafe level 1 or equivalent (see violation code 502 above).
