Observation (CORRECTED DURING INSPECTION): 1. < 10 PPM chlorine residual detected in the bleach sanitizer container containing an in-use wiping cloth.
2. Dried on food debris noted on a vegetable/ produce dicer.
Corrective Action(s): **Issues corrected during the inspection**
1. Operator added bleach to the sanitizer solution. 200 PPM chlorine residual was detected after bleach was added.
2. Operator brought the dicer for re-washing when this was brought to his attention. Please ensure staff clean and sanitize all dishwares after using and check that dishwares are actually properly cleaned before storing away.

Observation (CORRECTED DURING INSPECTION): Observed in the walk-in cooler: A tub of raw fish stored on the shelf above mashed potatoes and chopped carrot; A tub of raw chicken stored on the shelf above 3 heads of lettuce (not covered/ protected).
Corrective Action(s): **Issue corrected during the inspection** Operator reorganized the shelves during the inspection to follow proper storage hierarchy. Raw proteins and raw eggs must be stored below or away from produce/ cooked/ ready-to-eat foods.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Cardboard noted used on a shelf in the walk-in cooler.
Corrective Action(s): Remove the cardboard in the walk-in cooler. Cardboard cannot be used as a shelf liner. All surfaces in the food preparation and storage areas must be smooth, imprevious to moisture and easily cleanable.

Observation: No hot water available at the front handwash station in the server area.
Corrective Action(s): All handwash stations again must be equipped with hot and cold running water, liquid soap and paper towel at all time in order for food handlers to practice proper handwashing.
Staff is to use the handwash station in the kitchen for the time being until this issue is rectify.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: **Note: This is a repeated violation as noted in report # KLAI-CMYR84. If this violation is noted again in the future, enforcement action will be taken.**
Operator renovated the staff washroom and ice machine storage area. Due to the renovation, the handwash station by the staff washroom does not have running hot water, only cold water is available. New cooler in the server area has now been removed. No updated floor plan was submitted for approval prior to making the change.
Corrective Action(s): This issue must be addressed as soon as possible as a handwash station MUST have both hot and cold running water for food handlers to practice proper handwashing in order to prevent foodborne illnesses. Hot and cold running water must be supplied at this handwash station. For the time being, staff must use the handwash station in the kitchen for proper handwashing after using the washroom everytime until issue is rectified.
Operator is to submit an updated floor plan of the current layout of the restaurant, preparation and storage areas.
As discussed during the last routine inspection, operator must have Fraser Health's written approval by submitting any intended changes to their restaurant prior to making such change. Anymore illegal renovation or addition to the resturant (including the addition or removal of equipment) will result in increase enforcement actions.

Routine inspection conducted today:
- Handwash station in the kitchen accessible, equipped with hot and cold running water, liquid soap and paper towel.
- All refrigeration units were at 4C or below.
- All freezer units were at -18C or below.
- High temperature dish machine was able to reach 73.0C at the plate level during the rinse cycle.
- Proper dispensers, with handles, in-use for all bulk food containers.
- No signs of pest activities noted during the inspection.
- Mop buckets noted emptied when not in use.
- General cleanliness of the facility is satisfactory.
