Observation (CORRECTED DURING INSPECTION): 3 slices of pizza stored in the pizza warmer measured with an internal food product temperature of 51C. 60C is required for hot holding the pizza.
Corrective Action(s): Operator had voluntarily discard the 3 slices of pizza. 66C was measured from the pizza warmer after operator adjusted the temperature switch. Ensure temperature for the pizza warmer is monitored.

Observation: Food debris build up observed on the meat slicer. Operator stated the meat slicer was always cleaned and sanitized before use but not after use.
Corrective Action(s): Clean and sanitize the meat slicer. Follow your sanitation plan to clean and sanitize the meat slicer before and after each use. Correct by: immediately.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. Front area hand washing station was observed to be clogged. Water leakage observed near the P-trap area under the sink basin. 2. Back area hand washing station was obstructed with a can food stored inside.
Corrective Action(s): 1. Service/fix the front area hand washing station to ensure it is free of clog and leak. Correct by: today. 2. Remove the can from the back area hand washing station. Never store items in the hand washing station at all time. Corrected during inspection.

Comments

Routine inspection:
- Prep cooler & walk-in cooler maintained at 4C or lower.
- 2 beverage coolers functional. No potentially hazardous foods were stored inside.
- Front display cooler was broken. Only soda pops were stored inside. Do Not store any potentially hazardous food in this cooler.
- Domestic freezer functional. Monitor the freezer temperature daily.
- 200 ppm bleach sanitizer available in spray bottle.
- Reviewed manual dishwashing with the operator. Ensure 200 ppm bleach is used for the final sanitizing step.
- No sign of pest activities observed on site.

Note: Maintain temperature logs for all the coolers, freezer and pizza warmer. Temperature logs were not maintained at the time of inspection.
