Observation (CORRECTED DURING INSPECTION): The bleach sanitizer spray bottles in the seafood and produce departments were noted with over 200 PPM chlorine residual - chlorine test strips bleached out.
Corrective Action(s): **Issue corrected at the time of inspection**
Staff diluted the bleach sanitizer spray bottle and after the dilution 200 PPM were detected. Reminded staff that 2 tsp + 1 L water makes 100 - 200 PPM chlorine sanitizer solution.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Openings noted around the top half of the building in the receiving area where pests can easily enter into the building.
Corrective Action(s): Seal off all visible openings to prevent pest from entering into the facility.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Seafood's department walk-in cooler was noted with an ambient temperature of 11.0C.
The only cold potentially items stored in this unit were 2 containers of squid and shrimps which are being defrosted.
Corrective Action(s): The squid and shrimps were moved to another functioning cooler.
Repair the walk-in cooler so that it is able to maintain 4.0C or below before storing anything cold potentially hazardous in this unit. If unit will not be fixed, please do not store anything potentially hazardous and mark as out of use.

Observation: Cardboard being used as liners on the shelf in the produce walk-in cooler shelf and in the display area for customers.
Corrective Action(s): Remove all cardboard and use proper liners which are non water absorbent.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food in general were stored in proper storage hierarchy and protected.
Contractor pest control company comes in weekly - please ensure Manager has access to the pest report.

Note: Discussed about fixing the wall and floor condition in the meat department area. To address during the next routine inspection. All areas in a facility must be in good condition, smooth and easy to clean and sanitize.
