Observed Quats in sani bucket and spray bottle at much greater than 400ppm - at this concentration, the sanitizer is no longer a "no rinse sanitizer" and must be followed up with potable water. Sanitizer prepared to 200ppm. Recommend installing a dispenser for Quats or switching to bleach. If using bleach, a 100ppm Cl solution is needed (1 tablespoon bleach for 4L water) and obtain chlorine test strips.
Replace silicone at disphit and paint edges of counters/ledges where wood is exposed
Recommend adjusting prep cooler #2 to a resting temperature of 38C to buffer busy periods and prevent temperature increase
