A routine inspection was conducted, the following observations were made:
- Cooler was 4C; freezer was -14C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in use, the [Cl2] was 100ppm.
- All foods stored 6" off the floor on racks or pallets. Foods stored in food grade containers with lids.
- No expired foods found. FIFO rules being followed.
- All surfaces are smooth, sealed, cleanable, durable, and impervious to water.
- The cooling and drying rooms (for finished products) were clean and in good repair.
- Monthly pest control contract present, reviewed the reports from Sept-Dec 2019. Mechanical methods (catch-all-traps, glueboards, snap traps) of eliminating mice are being utilized inside the facility. Ensure the traps are correctly placed along the walls and replace the non-toxic bait with fresh stuff to attract the mice to the traps.
- General sanitation level is good. Improvement needed in the mentioned areas. More detailed cleaning requires to be done on a daily basis until the mice activity has been eliminated.
- Ensure the exhaust canopy and hoods are cleaned by a professional company on a yearly basis, or as per the cleaning company's recommendations.
- All items from the previous inspection have been addressed. |
