Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: - Upon arrival of EHO various foods stored outside of cooler including deep fried chicken, sausage & rolls. Temperature of 22°C , 15°C and 11°C respectively. Corrected During Inspection. Items returned to cooler. Facility has purchased new cooler unit fro cold storage. Potentially hazardous food items are to be stored in cooler units at 4°C not outside of 4°C for indefinite periods of time.

- Bubble tea pearls are not time tracked for 4 hours ambient air storage. After 4 hours any bubble tea pearl (cooled) at temperatures less than 60°C and greater than 4°C are to be discarded.

Going forward 4 hours ambient air time tracking is required in this area.

Observation: - Lack of sanitizer in bubble tea area. Sanitizer once located was found to be at concentrations less than 100ppm .

followup to initial inspection:

- Permit fees paid in full for >50 seats as discussed with owner
- cardboard removed
- floor holes have been repaired. Concrete has been added to portions of floor where tiles are missing, floor is now plush with tiled floor preventing water from pooling.
- no food stored at ambient temperature observed during inspection
- Bubble tea pearls now time stamped for 4 hours.
- Sanitizer throughout
- Head chef has been trained with FOODSAFE Level one (email in file)

NOTE: stainless steel partition between prep sink and handsink was not completed. Owner explained both sinks are to be used as handsinks. Therefore - NO FOOD is to be stored or cooled in this prep sink. Owner explained all food production involving washing etc occurs next door. If EHO observes food contamination in this area due to hand sink use or potential for food contamination due to food being stored in this area then partition will be required. EHO has observed food stored in this area in the past however this was before facility obtained additional food storage cooler.
