Kitchen:
- Hand sinks fully equipped with soap, paper towels and hot/cold running water.
*Ensure all paper towel dispensers are refilled right away once emptied
- Walk-in cooler = 3 C.
- Walk-in freezer = -16C.
- Thermometers equipped in walk-in cooler and walk-in freezer.
- Temperature logs maintained for walk-in cooler and walk-in freezer.
- High temperature dishwasher sanitizing with 71 C at dish surface. Run the dishwasher multiple times in the morning or after downtime before putting in dishes to ensure the temperature has raised high enough for adequate sanitation.
-Sanitizer dispenser and bucket noted at 200 ppm QUATS with wiping cloths
-Facility appears to be maintained in sanitary condition
