205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Tofus stored in open display cooler along the wall had internal temperature ranging from 12.4'C-15.6'C. Pictures taken. All tofus (11) were discarded at this time.
Corrective Action(s): Ensure to monitor the cooler temperature on a regular basis. All potentially hazardous food (i.e. tofu) must be stored at or below 4'C at all times.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Cardboards being placed on top of the cutting board to cut vegetables/fruits. Cardboards were discarded and cutting board below was washed/sanitized using 200ppm chlorine solution at this time.
Corrective Action(s): Ensure all food handling is done on a food grade surface. All food contact surfaces must be sanitized using chlorine before/after, and every 2 hour during operation.

Observation: 1) Open cooler had ambient air temperature at 13.4'C. Staff had adjusted the temperature during the inspection but the temperature was still above 10'C.
2) Cutting board requires a replacement.
Corrective Action(s): 1) Ensure to monitor the temperature. In case the temperature does not reach 4'C or below within the next hour, call for service. Contact the health inspector to notify. In the meantime, DO NOT store any potentially hazardous food in this cooler.
2) Ensure to have the cutting board replaced and contact the health inspector to notify.

Routine inspection conducted:

-Handwash station at the back adequately supplied.
-Refrigeration temperatures satisfactory, except mentioned above. Thermometers available.
-200ppm chlorine solution available in a spray bottle. Bleach available for dishwashing.
-Back storage area satisfactory.
-Damaged fruits (i.e. mangoes) being sorted out at this time to be discarded.
-General sanitation throughout satisfactory, but could be improved by cleaning hard to reach areas on a more regular basis. (i.e. floor underneath shelving units inside walk-in)
-Professional pest control company contracted. Traps in place. No evidence of pest activity observed at this time.
