Observation: A few food inserts were overstocked with cut vegetables. Foods must not be stored above the insert line in the insert cooler as they will not maintain temperature 4C or below. Cut vegetables were measured at 10-18C. Containers of cut vegetables and bean sprouts stored on the table infront of the cook line measured at 18C. Photos taken.
