Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle measured at 0ppm concentration at time of inspection.
Corrective Action: Bottle of sanitizer was replaced at time of inspection and measured at 200ppm.
Quat sanitizer must measure at 200ppm to properly sanitize food contact surfaces and prevent pathogen growth. Do not refill sanitizer bottles with water as this is not a sanitizer.

Observation: Rodent droppings observed on bottom shelves of server station and prep areas, underneath dishwasher area and underneath dish storage areas.
Corrective Action: All areas with rodent droppings must be washed and sanitized. Monitor daily for new activity and continue to wash / sanitize were dropping are observed. Contact Pest control for further action

Observation: (1) Back screen door has large gap at top and does not properly close.
Corrective Action: Replace or repair door so that there is no gap at top and so that it can properly close, to prevent pest from entering kitchen. Keep back door closed until screen door can be repaired.

(2) Large holes underneath dishwashing area from recent repairs were observed at time of inspection
Corrective Action: These holes must be sealed as soon as possible to prevent the entrance of pests to the facility. Seal all holes / cracks that are a 1/4" or larger. Continue to monitor for new holes and seal / repair when observed. Professional Pst Control (ORKIN) visits once a month and tin can traps are available. Contact Pest control for further action.

Corrective Action: Do not use tin foil for covering shelves, as it is not a long-term durable food-contact surface and can not be properly washed and sanitized. Tin foild removed at time of inspection.
