Observation (CORRECTED DURING INSPECTION): 1) Deli slicer noted with encrusted food debris on the blade sharpener component
2) Pestar and mortle noted with encrusted debris
3) White onion bin with black buildup at the bottom corner
4) Staff observed drying food contact surfaces with dirty cloth
Corrective Action(s): 1) Clean and sanitize food contact surfaces prior to food handling the next day
2) Staff will replace broken and damaged equipment for ease of cleanability
3) Allow equipment, utensils, and food contact surfaces to air dry properly to prevent recontamination and also spread of contamination from reused cloths.

Observation (CORRECTED DURING INSPECTION): Chipped wooden spoons and one rubber spatula noted
Corrective Action(s): Remove damaged equipment and ensure equipment, utensils, food contact surfaces are in a smooth, durable, easily cleanable condition to ensure they can be properly washed and sanitized. Chipped, pitted, rough, or other similar imperfections on surfaces allow bacteria to harbour around these surfaces and make it difficult to sanitize.
