Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer in bucket was found at 0ppm concentration. All sanitizers must be at the required concentrations for proper sanitizing procedures.
Corrective Action(s): Operator prepared a new bleach solution which was at 100ppm concentration of bleach water for sanitizing. Spray bottle in the cooking area was found at 100ppm concentration.
Reminder: Change sanitizing solution (bleach water) on frequent basis to ensure proper concentrations.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Cooked foods (ie.Boiled potatoes) found to be stored in non food grade containers. Foods are open to contamination.
2. Food items found on the floor. Ffoods must be stored at least 6" off the floor. This includes in the walkin cooler and walkin freezer. All storage areas need to reorganized so that all foods are stored separately from equipment. Cooked foods should be stored separately from the dry storage area.
3. Foods were found uncovered throughout the kitchen. This can lead to contamination.
Corrective Action(s): 1. All food items must be stored in food grade containers and protected from contamination.
2. Reoganize kitchen storage areas including walkin cooler and freezers so that all foods are protected from contamination.
3. All foods must be covered at all times.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: All floors and shelves require routine cleaning. Debris and unsanitary areas were found throughout the kitchen. Walkin cooler and walkin freezer require thorough cleaning.
Corrective Action(s): All areas must be cleaned on a regular basis.

Recommendation: Implement a daily sanitation checklist/schedule that can be followed by all employees. This will ensure routine cleaning procedures are being followed daily.

Routine inspection.

Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
Handwashing stations in washrooms are equipped with hot/cold running water and liquid soap and paper towels.
Dishwasher found to have 50 ppm concentration for sanitizing cycle.
Walkin cooler at 3c.
Sliding door cooler at 4c.
Walkin freezer at -18c. Chest freezer at -18c.
Hot holding unit with chickpea curry found at 65c.
All employees observed to wear proper protective equipment including aprons and hair covers.

The following requires operators attention and must be corrected by next inspection:
1. see above noted violations.
2. New dispensers need to be installed at all Handwashing stations.
3. Ensure all sanitizing bottles are labelled appropriately and each prep station has a sanitizing bucket available for use.
