A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Walk-in-cooler temp was 12C as it was on its defrost cycle.
- High temp dishwasher had a rinse cycle temp of 71C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Sanitizer in spray bottles and wiping cloth buckets had Quats strength of 200ppm. Test strips present.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust hood canopy and filters were professionally cleaned & serviced in July 2023, next service & cleaning due in December 2023, as per service sticker.
- No signs of pests.
- All surfaces, equipment, food containers & lids, and utensils in good working order.
- FoodSafe, or equivalent course, certified staff present.

ACTION
- Walk-in-cooler temperature was 12C and on its defrost cycle. Monitor and check the temperature in 1 hour. If the temperature has NOT dropped below 4C after 1 hour, IMMEDIATELY move all food out of the walk-in-cooler and store in working coolers, and then call a repair company to fix the walk-in-cooler.
